Nikki grew up in Boulder, Colorado on the standard American diet, although sitting down to a home cooked meal every night. She battled body issues ranging from severe acid reflux and taking a high dose of prescription medication at 13, to being given accutane three times for bad skin, to insomnia over the course of her young adult life. Having little knowledge in nutrition, she attributed these to being "normal" and kept taking more pills to temporarily solve the issues. None of these issues stopped her from her dream of modeling, which she pursued starting at the age of 16 and continued throughout college.

After graduating with honors from the University of Northern Colorado with a B.A. in Communications and Journalism, she chose to do what so many dream of: modeling around the world. This job took her across the globe to be the face of campaigns in cities such as Sydney, Bangkok, Shanghai, Athens, London, New York, Seoul, and Los Angeles.

In 2012, Nikki left the modeling world to pursue a career in health after realizing she needed to make a change in her own life in order to overcome all of her body issues, which were quickly getting worse. She moved to London where she got certified in everyday nutrition, raw foods, sports nutrition, and became a certified Health Coach. Through all of her studies, she learned that the key to weight loss, a clear complexion and overall well-being wasn't starvation, but consuming real foods.

She developed the 5-Day Real Food Detox to introduce a program that was doable to EVERYONE! Real foods are the basis of this program and there are no gimmicks involved. Cartagena – What To Do, Eat & See
