Baking with Kat from THE PROPOSITION

The Proposition (The Plus One Chronicles, #1) by Jennifer Lyon Kat Thayne, the heroine of THE PROPOSITION, walks away from her life of wealth and privilege to pursue her dream of becoming a baker. She is now the proud owner of Sugar Dancer Bakery.

Kat is great at baking. But not at romance. The last time she tried to be intimate with a man, she had a full blown panic attack. So these days, Kat sticks to baking, determined to build her bakery into a success.

Everything is going to plan, right up until Sloane Michaels walks into her life and makes her a sexy PROPOSITION she can’t refuse.

But let’s get back to Kat’s comfort zone of baking. I’ve asked her to share with you all one of her bakery treats that you can make at home. And here it is:

LEMON AND CREAM CHEESE PIE

1 box of refrigerated pie crust (Kat’s trying to make it easy on you all—there are some pretty good refrigerated pie crusts. She also said you could try a graham cracker crust if you like.)

Filling:
2/3 cup sugar
2 tablespoons cornstarch
1 cup cold water
2 egg yolks
2 teaspoons grated lemon peel
3 tablespoons (fresh squeezed!) lemon juice
1 tablespoon butter
1/3 cup sugar
1 (8oz) package cream cheese, softened
1 egg


Whipped cream for topping.

Directions:

1. Preheat oven to 375 degrees.
2. Place pie crust in a 9-inch pie pan according to directions on box for a one-crust pie.
3. In a 2-quart saucepan, mix 2/3 cup sugar and the cornstarch. Gradually stir in cold water until blended. In a small bowl, beat egg yolks slightly with fork, and then stir yolks into sugar mixture in the pan. Cook over medium heat 10 minutes, stirring constantly, until mixture boils. Boil for 1 minute and keep stirring. Then remove from heat. Stir in lemon peel, lemon juice and butter until well blended.
4. In small bowl with electric mixer, beat 1/3 cup sugar with the softened cream cheese on medium speed until smooth. Beat in 1 whole egg until blended. Spread the cream cheese mixture in the crust lined pan. Spoon lemon mixture evenly over the cream cheese layer. Spread to cover.
5. Bake 35 to 40 minutes until crust is golden brown. Center will not be set, but don’t overcook. Remove from oven and cool for 30 minutes then refrigerate until chilled through (1 to 2 hours) Top with whipped cream and serve. Refrigerate leftovers.
