Dr. Elizabeth Foley-Ainslie (Dr. Ellie) received her PhD in Nutrition and Food Science in 2020 from Florida State University, and did her post-doctoral training at St. Jude Children's Research Hospital. She also has a master's degree and bachelor's degree in Exercise Physiology from the University of Miami.

In addition to her qualifications in nutrition, Dr. Ellie writes both educational and fictional children's books. She believes in the power of food to heal the body, and takes on clients for health coaching. She also hopes that her books will give children the foundation they need to make healthy choices as they develop, thus combating the childhood obesity epidemic.
