Mexican Hot Chocolate with Kahlua
Living in the American Southwest, Mexican food has been a part of my life for as long as I can remember. So imagine my delight when I discovered this recipe for Mexican Hot Chocolate with Kahlua. It’s great for the holidays or for those chilly evenings when we’re entertaining outdoors. (And yes, we entertain on the patio year-round in Arizona!) This Mexican Hot Chocolate has a nice kick that’s smoothed out by the chocolate shavings and whipped cream. The recipe below first appeared in LIGHT PARADE, a short holiday mystery in my Det. Ingredients
Best-Ever Hot Cocoa Recipe
2 oz Kahlua
Dash of cayenne pepper
Dash of nutmeg
Cinnamon stick
Whipped cream (optional)
Chocolate shavings (optional)
1. Make one basic Holiday Hot Chocolate recipe.
2. Add Kahlua, cayenne and nutmeg and stir with cinnamon stick.
3. Pour into mug and top with whipped cream and chocolate shavings.

2 T Dutch Cocoa
2 cups whole milk
4 oz bittersweet chocolate, finely chopped
2 T organic raw sugar
2 T heavy cream
Pinch of salt
Dash of vanilla extract

1. Heat water to simmer. Stir in cocoa and whisk until lumps are gone.
2. Add milk and heat to just starting to simmer. (Don’t boil!)
3. Take off heat and add chocolate. Let sit for one minute as chocolate melts.
4. Put back on heat. Add sugar, cream, salt, and vanilla. Stir for 2 or 3 minutes.
5. Pour into mugs and ENJOY!

Peppermint Hot Chocolate for Adults
Looking for a fun beverage for the holidays? Check out my Peppermint Hot Chocolate for Adults. It’s festive and fired up with Peppermint Schnapps. Last December I hosted a Hot Chocolate Party with friends and served this along with Amaretto Hot Chocolate and Mexican Hot Chocolate with Kahlua. Amaretto Hot Chocolate Recipe

Ingredients

2 oz Amaretto
Whipped cream (optional)
Shredded coconut (optional)

Best-Ever Holiday Hot Chocolate Recipe
Last November I embarked upon a great quest to find the perfect hot chocolate recipe. I wanted something steamy and creamy and a tad bit decadent. I tried dozens of variations: with cream, whole milk, half and half, and even nut milks; with cocoa powder and/or chocolate with varying percentages of cacao; and with and without salt and vanilla. After extensive taste testing with My Guy, here it is, the Best-Ever Holiday Hot Chocolate! This version is wonderfully creamy and full of bold chocolate flavor, perfect for sipping while curled up with a good book or sharing with friends during the holidays. Happy sipping! Bonus Recipe
Got tomatoes and basil this summer? Here’s a light but sophisticated pasta salad bursting with the bright flavors of summer. Serve with tossed greens and fresh melon for a lovely light supper. Also a great summer potluck dish.
Pasta Salad with Slow-Roasted Tomatoes
Serves 4-6 as a side
Roasted Tomatoes
4 cups grape tomatoes
Olive oil
Salt
Dressing
1 clove garlic, crushed
1 tablespoon dried oregano
1 teaspoon sea salt
Freshly ground black pepper
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1/4 cup olive oil
Salad
1/2 pound dried bite-size pasta (I like gemelli), cooked al dante and drained
1/2 cup cotija or feta cheese, crumbled
1/2 cup pine nuts, toasted
1/2 cup pitted and halved olives (I love kalamata)
Salt and pepper
Handful fresh basil leaves, chopped
Heat oven to 300°. Cover 2 baking sheets with parchment paper. Cut tomatoes in half and place cut side up on baking sheets. Drizzle with olive oil and a dash of salt. Bake until slightly dry, about 90 minutes. Cool. Next, for dressing, mix garlic, oregano, salt, and pepper in a small bowl. Whisk in lemon juice, vinegar, and oil. (This is a bold, sassy dressing. But it really sets this pasta salad apart!) Finally, to assemble salad mix drained pasta, roasted tomatoes, cheese, pine nuts and olives in a large bowl. Add dressing. Top with basil. MY FEATURED RECIPE: BROWN BUTTER SEA-SALT CARAMEL SNICKERDOODLES
Sweet and salty with a gooey center and a cinnamon kick! Seriously the best cookie recipe on the planet!
Yield: Two dozen cookies; Prep time: 1 hour and 15 minutes; Total time: 1 hour 30 minutes
Ingredients
1 cup unsalted butter, sliced
2 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
1 1/4 cups dark brown sugar
1/2 cup granulated sugar
1 large egg
1 egg yolk
2 teaspoons vanilla extract
1 tablespoon plain Greek yogurt
1 cup caramel squares, cut in half
For rolling the cookie dough:
1/4 cup granulated sugar
2 teaspoons ground cinnamon
Sea salt for topping cookies
Directions
1. Place sliced butter in heavy-bottomed saucepan and cook over medium heat, whisking often until it turns brown and you smell a nice, nutty aroma. Set aside to cool.
2. Whisk flour, baking soda, cream of tartar, cinnamon, and sea salt in a medium mixing bowl and set aside.
3. In a large mixing bowl, cream together the browned butter and sugars. Beat in egg, egg yolk, vanilla extract, and Greek yogurt. Mix in dry ingredients until just combined.
4. Form the dough into a large ball, cover tightly with plastic wrap, and place in refrigerator for 30 minutes.
5. Pre-heat oven to 350 degrees.
6. Divide and measure chilled dough into one tablespoon portions, and roll each into a ball. Flatten balls with palm and place one caramel half onto each circle. Tuck dough around caramel and roll into a smooth ball again.
7. Mix 1/4 cup sugar and 2 teaspoons ground cinnamon in a small bowl. Roll dough balls in sugar mixture and place on baking sheet. Sprinkle with sea salt.
8. Bake snickerdoodles for 8-10 minutes until brown around the edges but still soft in the center and there are cracks on the surface of the cookie. Allow snickerdoodles to cool 2-3 minutes on the baking sheet. Transfer to wire rack and let cool.
