The Final Book in the V Mafia Series is Now Available!

The warm weather has finally been replaced with cool, crisp mornings and brisk afternoons, which I love!! Whenever the weather changes, I seem to cook more (recipe included below), bake more, and think up crafts I rarely get to.


At the moment, I’m working on the second book in the Silver Ridge Series and finalizing Lucky in Love (Island County #8). I can’t wait to share both stories with everyone. Billy’s life is changing at lightning speed. His business is booming. He has franchises opening up across the Pacific Northwest, and he clearly doesn’t have time for love.

And to keep up with my recent tradition of posting a recipe, we enjoyed this delicious cheesy bread that was so easy to make!




One round loaf of rustic bread


1 cup shredded cheddar


1 cup shredded mozzarella


8 tbl butter


3 garlic cloves crushed


1 tsp seasoning salt


1/2 tsp cayenne


red pepper flakes to taste

350 degree oven


Cut bread into diagonal diamonds being careful not to cut through bottom. Combine butter, garlic,cayenne, red pepper flakes, and salt. Brush onto each of the cut pieces of bread. Stuff cheese in each of the quadrants. Wrap with foil and bake for 12-15 minutes. Remove foil and bake until top of bread is a bit crunchy and cheese is completely melted.

Where did the time go?

Wow! Not only did summer fly by, so has the year (especially when it comes to blogging). I haven’t had a post since January! How can that be!??!! It’s not like I haven’t been writing away!


We’ve settled into life here on the peninsula, and I’m definitely looking forward to fall! Right now it’s raining ash from all of the fires. It’s coating everything from cars to window screens. I’ve never seen anything like it before. We’ve had an extremely warm summer here in Washington. Instead of the usual seventies and eighties, we sat in the nineties quite a few times, and I’ve come to realize how much I enjoy rain and cloudy skies. I’m really looking forward to autumn weather, warm apple cider, baking and more baking! (And RAIN)


Buttercup, our youngest English bulldog (9 years old), was diagnosed with lymphoma in May, and she’s been undergoing chemotherapy. It has been such a rollercoaster of emotions, but her little happy spirit always lifts ours. Any thoughts and prayers you can send her way are much appreciated. She’s such a little sweetie and a huge part of our family.


Going forward, my plan is to include at least one recipe per blog post. We love to cook and bake at our house, and it’s always fun to share a success! So, the first recipe I’ll be sharing is for homemade english muffins that my husband, Jon, made. They were delicious!! He got the recipe from the King Arthur Flour website.

ENGLISH MUFFINS (KING ARTHUR FLOUR RECIPE)







1 3/4 cups lukewarm milk
3 tablespoons softened butter
1 1/4 to 1 1/2 teaspoons salt, to taste
2 tablespoons sugar
1 large egg, lightly beaten
4 1/2 cups King Arthur Unbleached Bread Flour
2 teaspoons instant yeast
semolina or farina, for sprinkling the griddle or pan






Instructions

Note: Thanks to reader feedback, this recipe has been amended as of 1/08/13, as follows: the amount of flour has been increased to improve the dough’s consistency; and the cooking time has been increased.
Combine all of the ingredients (except the semolina or farina) in a mixing bowl, or the bucket of your bread machine.
This is a very soft dough, so you’ll need to treat it a bit differently than most yeast doughs. If you have a stand mixer, beat the dough using the flat beater paddle until it starts coming away from the sides of the bowl, and is satin-smooth and shiny; this will take about 5 minutes at medium-high speed. When you lift up the beater, the dough will be very stretchy. If you have a bread machine, simply use the dough cycle.
Scrape the dough into a rough ball, and cover the bowl. Let the dough rise until it’s nice and puffy; this will take 1 to 2 hours or so.
Prepare your griddle(s). Using two griddles allows you to cook all the muffins at once; but since you probably don’t have two griddles, you’ll need to cook the muffins in shifts. Whatever you use — an electric griddle, stovetop griddle, frying pan, electric frying pan — sprinkle it heavily with semolina or farina. If you’re using a griddle or frying pan that’s not well-seasoned (or non-stick), spray it with non-stick vegetable oil spray first, before adding the semolina or farina.
Gently deflate the dough, and divide it into 16 pieces. Shape each piece into a smooth ball, then flatten the balls until they’re about 3″ to 3 1/2″ in diameter.
The easiest way to handle and cook these muffins is to lay them right onto the cold surface you’ll be frying them on. That way, you don’t have to move them once they’re risen; and they won’t mind cooking very slowly as you fire the griddle up to its desired heat. If you don’t have enough griddle space to do this, sprinkle a baking sheet heavily with semolina or farina, and place the muffins on the sheet; they can be fairly close together. Either way, sprinkle the tops of the muffins with additional semolina or farina.
Cover the muffins (a piece of parchment works well), and let them rest for 20 minutes. They won’t rise like crazy, but will puff a bit.
Cook the muffins over low heat for 7 to 15 minutes per side, until their crust is golden brown, and their interior is cooked through. When done, the center of a muffin should register about 200°F on an instant-read thermometer. If you find the muffins have browned before they’re cooked all the way through, no worries; simply pop them into a preheated 350°F oven for about 10 minutes or so, or until they’re thoroughly cooked.
Remove the muffins from the griddle (or oven), and let them cool thoroughly before enjoying. Remember: use a fork to split, not a knife to cut. Fork-split muffins will have wonderful nooks and crannies; knife-cut ones won’t.
Yield: 16 large (3″ to 3 1/2″) English muffins.

I hope everyone had a wonderful holiday season. It’s hard to believe that January is almost over! I’ve been working on a lot of projects over the last few months, and I can’t wait to start sharing some of them with you! In December, I released the first in the V Mafia Series, Blake, and have really enjoyed writing the Volkov Brothers.

Well, it has been a super busy summer with lots of hiking, gardening, and writing. Between Forever Love, UprisingZ, and now Mia, I can say the summer has been not only fun but productive! I’ve been working away on the Island County Series, and realized I missed posting about the two latest releases! Where did the time go? It’s hard to believe we’re already headed to summer! I’m excited to start playing tennis in the next couple weeks (using my own rules), and we’re looking forward to some water sports (kayaking, canoeing, paddle boarding) now that we live so close to the water! Jon made a whole bunch of self-watering pots, and I’ve planted flowers and veggies, which have all gotten huge. We’ve also been using our new grill up a storm! Our weather seems to be breaking all kind of heat records this spring, but when you have two English Bulldogs that’s not great news. They hate the heat! So between plenty of fans and a/c, we’re keeping them cool, but they’d rather have some snow. Actually, it’s more one bully (Buttercup) than the other.


I’ve been writing a ton and loving every second. I released Tangled Love on Pelican Point in April and Forever Love on Fireweed Island in May. Both stories were so much fun to write. Between Sophie and Jewels, Island County is growing in leaps and bounds. I love getting to revisit characters from Beyond Love and prior Island County books. Readers have been writing to let me know that Jake and Jewels from Forever Love just might be their favorite, which totally makes my day! Although some will always be fans of Tori and Mason.

Happy 2016 CONTEST! Love Redone in Hidden Harbor pre-order links now available

It’s hard to believe that we’re close to mid-January of 2016! We had a really nice December (even with nasty colds that hung around far too long), and we got to enjoy some snow, good food, friends, and family. I released the seventh book in the Beyond Love Series, “Beyond the Mistletoe”, and I finished a novella for my newsletter subscribers “A Very Merry Wedding: A Gabby and Jason Novella” and sent it out to them as a fun surprise for 2016. The writing schedule for 2016 looks like a busy one and I’m absolutely thrilled about it. There will be at least two new Island County books. We had a wonderful summer, but I’m looking forward to crisp autumn air, baking, and lots of reading by the fire! Contest for Beyond Promise Release Day Today!!

What a busy summer!


Beyond Promise is here, and I can barely believe that the sixth book in the Beyond Love Series has arrived! I hope you all love Lily and Ayden’s final story. It’s definitely bittersweet! I think that’s the third time I’ve used that word today to describe how I feel. I’m so happy I’ve been able to write about Lily, Gabby, and Brandy, but it’s hard to believe it’s getting close to the end.


That being said, Beyond the Mistletoe will be coming out on December 5th, and I’m so grateful for the Island County Series so I can still check in on Lily, Brandy, and Gabby from time to time. :)

Finding Love in Forgotten Cove Overview

Tori Aickens understands more than most what it feels like to lose the ones you love, but she also understands how to survive that kind of pain by leaving it all behind and never looking back.
