Minka's Bourbon Bacon Jam
Ingredients:
12 oz bacon, chopped (small pieces work best)
1 sweet onion, finely chopped/diced
3-4 garlic cloves, minced
2/3 cup apple cider vinegar
5-6 Tbsp brown sugar
5 Tbsp bourbon
5 Tbsp water
A pinch of black pepper to taste
A little bit of salt never hurts
Variations of the recipe:
Spicy: I don't like much spice. BUT if you do, add a pinch or more of cayenne pepper. If you like things HAWT→ add as much cayenne pepper as you like!
Garlic: I LOVE me some garlic! If you're a garlic lover like me, add some minced garlic to your burgers. I like to add garlic and a bit of onion powder to mine.
Instructions:
Sauté bacon over medium heat until crispy. Approx 8-12 mins. Add in onion and garlic, cooking until soft and tender. Approx 3-5 mins. *I recommend that you do not use microwave bacon. Center cut bacon is a good choice. There could be a lot of grease so I would drain about half the grease.
Add in the apple cider vinegar, brown sugar, bourbon, water, black pepper, salt, and cayenne *If you elected for spice. Combine all ingredients. Bring to a boil, then simmer. Stirring occasionally until the liquid is mostly cooked off. Approx 10-15 mins. Mixture should be thick and syrupy.
Serve immediately. Or place in a container and refrigerate for a later date.
Tips:

Copper Lining Releases TOMORROW!

As I push the button for the elevator, I think about the possibility of falling for him. Today, I saw such a different side to him. A side that I didn’t think existed.
𝘽𝙚𝙘𝙖𝙪𝙨𝙚 𝙮𝙤𝙪 𝙠𝙚𝙚𝙥 𝙚𝙫𝙚𝙧𝙮𝙤𝙣𝙚 𝙖𝙩 𝙖 𝙙𝙞𝙨𝙩𝙖𝙣𝙘𝙚.
For so many years, I’ve been on my own. It’s been easier that way.
Could I really let someone in again? The risk of getting hurt seems as unlikely as it does likely. There’s a risk with everything.
The elevator doors open, and I step inside blowing out a deep breath. I rub at the back of neck.
Could Wes be the man who makes me believe in second chances?

EXCERPT Copper Lining
He hates me.
I wish things could be different between the two of us.
Another time. Another place.
You had that Minka. You had Maui.
My stomach hallows as I recall the way Wes kissed me. The way he’d driven deep inside me, so damn deep. I’d never felt anything like it—something so profound and wonderfully intense. My thighs press together at the memory.
I loved every thrilling minute of our time together. It meant something to me. But I have no idea what to do with any of these feelings.
Yes, you do. Turn them off.
Jackie sets my drink in front of me, and I take a sip. Swallowing I relish the burn, it feels good. Really good.
Almost as good as it feels to see Wes.
But you can’t let it feel good. You have a job to do.

Sweet Agony Excerpt
Oh my goodness, going back and revisiting the Cardwell Family and each book has given me such joy. Here's one of my favorite scenes in Sweet Agony

Of course Brant’s here. And he looks hot as hell, bringing all my rugged, dirty, country boy fantasies to life.
Someone’s getting a real kick out of these run-ins between the two of us.
He’s wearing a tight, grey t-shirt that clings to his muscles, every single one of them and light blue denim jeans. Probably Levi’s.
Please let them be Levi’s.
I amble through the crowd looking for my friends, desperately trying to avoid Brant’s eyes on me. It’s hard not to notice him, his big body towers over everyone in the place. He walks away from the bar and I stop near the jukebox avoiding eye contact.
“Caroline,” Maybelle calls out my name. My gaze flicks to her and Sawyer and that’s when I see Brant standing at their table.
Oh gawd.
Suddenly the urge to duck into the ladies’ room hits me. Instead I look toward the beer decal mirror on the wall. At least I look more put together than when Brant saw me earlier. I changed into a striped button-down shirt and my favorite pair of high-waisted denim shorts.
And of course, the open seat at the table is right in-between Maybelle and Brant.
