Peggy Hi Lucy....I am a Michigander born and raised and I love what they call a Michigan Traverse City Chicken Salad. Start with 2 cups of mixed greens (I like to make sure I include spinach); about 4 ounces chicken breast grilled and cut into strips; one small red onion chopped; about 3 tablespoons of dried cherries (I tend to like more); about tablespoons of chopped walnuts (you could also use pecans); one small tomato cut into quarters (you could also use cherry tomatoes); about two or three tablespoons of feta cheese (you could also use blue cheese if you are a fan) and dress with a raspberry vinaigrette (or you could use a balsamic vinaigrette). It makes a wonderful salad. I also adapt this into a wrap sandwich for something different at lunch.
