Some time back, when 'The Sentinel' was published, I noticed a few reviewers making remarks about the scene where Guzman is eating churros while thinking about the way some people got the mix exactly right, blending sugar and salt. Several reviews took this as an indication that I knew nothing about Spain... etc etc.. whereas they 'knew' better.
In the interests of never letting an argument go unsettled (Guzman certainly wouldn't) I have visited a number of Spanish Culinary web sites and consulted Spanish friends. The conclusion is that Churros do require salt - up to 5 grams in one recipe. Glad to clear that up.
