Leftover roast chicken + curry paste = delicious quick dinner
It was another busy day at my desk, an afternoon filled with meetings, and the increasing need for a quick to prep and eat meal. The leftovers from Monday’s roast chicken were perfect for a speedy curry, along with a generous portion of mushrooms, and the last scrapings of the Korma Curry Paste.

Some plain basmati rice, and a bowl of poppadums completed the picture. From start to eating in around twenty minutes. Perfect for a weeknight meal
