The last steak & mushroom pie – and colcannon potatoes
It was with delight I found a third family-sized steak & garlic mushroom pie in the freezer, and that felt like a Friday night dinner. I usually make mashed potatoes with it, but I had some silverbeet leaves to use, so I turned the mash into an Irish dish, Colcannon potatoes. Kinda. The authentic dish is made with cabbage, and LOTS of butter, but mine was a lighter version.
I shredded the (small amount of) silverbeet, and steamed it over the boiling spuds, then set it aside while I mashed the potatoes with butter and milk. Plenty of milk, to make it creamy and luscious. Then I stirred the cooked silverbeet through the mash, added salt and pepper, and a blob of butter on top, to melt into it.
Pie + colcannon + peas = hearty dinner. All washed down with a bottle of beer. Well, it is Friday
