Where were you?

Today is September 11, the day that changed America completely 19 years ago.

Everyone old enough to remember that day can tell you exactly where they were when they heard the news.

I’d arrived for my Leadership class shortly before eight central time when one of my classmates said a plane had hit one of the towers. For the rest of the morning, the class was forgotten and we were glued to the television watching the horrible events of that day.

19 years ago

246 people went to sleep in preparation for their morning flights.

2,606 people went to sleep in preparation for work in the morning tomorrow.

343 firefighters went to sleep in preparation for their morning shift.

60 police officers went to sleep in preparation for morning patrol.

8 paramedics went to sleep in preparation for the morning shift of saving lives.

And then

ᴍᴏʀɴɪɴɢ ᴄᴀᴍᴇ.

Their last.

As we rest tonight and awaken to a new day, may we remember that day.

And may it change us,

once again

To become,

once again

One nation, under God

Let us not forget.

Ever.

No matter how many years past, we will never forget the sacrifices made that day.





This month started out hot…until two days ago when we here in Texas got our first taste of Fall and it was amazing.

The cooler weather – even for a few days – makes me want to bake!

Today, I thought I’d share my recipe for Blueberry Cream Cheese Muffins! It’s a favorite for a cool crisp morning.

Blueberry Cream Cheese Muffins Recipes:

Prep Time: 15 mins

Total Time: 40 mins

Servings: 12 0

Ingredients

1/2 cup butter, softened

1 (3 ounce) cream cheese, softened

2 eggs, beaten

1 cup sugar

2 teaspoons vanilla

2 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 1/4 cups blueberries

1/2 cup milk



TOPPING

1/4 cup butter, softened

1/4 cup flour

1/2 cup brown sugar ( packed)

1 teaspoon cinnamon

Directions

In a medium mixing bowl, cream butter with cream cheese. Stir in beaten eggs, sugar, nd vanilla.
Add flour, baking powder, baking soda, nd salt. Stir in blueberries. Lightly mix in milk without beating or overstirring mixture.
Spoon into greased muffin tins until 3/4 full.
TOPPING: Mix butter, flour, brown sugar and cinnamon until crumbly. Sprinkle on top of muffins.
Bake in a 375 degree oven for 25 minutes. Cool and remove from muffin tin.
