Box Cake Cookies

Makes 28 cookies

Ingredients:
Box chocolate cake mixTwo eggs½ cup of your favorite vegetable oilOne stick unsalted butter, softened to room temperature1½ cups confectioner's sugar¼ tsp vanilla extractChocolate jimmiesDirections:Preheat oven to 350°.In a mixing bowl, add two eggs and the oil to the dry cake mix. Stir until well combined. The dough will be sticky.Scoop dough by tablespoon measure onto parchment lined baking sheets.Bake for 9 - 11 minutes or until desired doneness is reached.While cookies are baking, mix butter and powdered sugar with vanilla. Beat until fluffy.Cool baked cookies for 2 minutes before removing them to a wire rack.When the cookies are completely cooled, spread icing onto each cookie.
