Squash Your Hunger


You guys. I did not expect this recipe to work. Even as I was making it, I was thinking about what I'd eat when it failed miserably. To my delight and surprise, it was DE-LI-CIOUS. I cannot even believe how yum. Not only that - it's two meals. The leftover spaghetti in the middle will be the base of my spaghetti squash casserole. Tune in for that. For now, make yourself some spaghetti squash pizza!

1 medium spaghetti squash
1 cup of organic spaghetti sauce
1 cup of part skim mozzarella

Cut a spaghetti squash in half and scoop out the seeds. Place in a covered dish with a 1/4 inch of water and microwave for 10 minutes. It'll be hot when it's done so give it some time to cool down so you can pick it up without screaming.

When cool, use a fork to scrape the insides of the squash but keep it in the squash shell. Mix squash "spaghetti" with half of the sauce and cover with half the mozzarella. Do the same for the other half of the squash.

Place in the oven on the top rack at broil for 5-7 minutes or until cheese browns.

Then pat yourself on the back for winning at life. Picture Picture
