Well, in Ruchia's case the new host the Temple had in mind for Des was not actually present when she died and so wasn't actually an option.
there's also Cattilara's demon. It seemed to be not sure which of the three of them to go to, but then chose the female of the group.
There's also the fact that, when someone dies, at least one of the Gods is alarmingly nearby, which'll put any demon into a state of frenzy. So one gets the feeling that a demon will make split-second decision, and then hunker down and hope the God doesn't notice them. (Though there's another question: are demons as afraid of, say, the Daughter as they are of the Bastard?)

Demons are alarmed by all the gods, but it's the Bastard who has to power to recall them. It would not be impossible for the dying soul to go to another god, and the demon be rendered down for parts by the B. (Or be allowed to go on in the world, depending.) Temple sorcerers are normally dedicated to the white god, but it's not an invariant.
