Great list! I didn’t know about the Hillerman anthology or the Matheson collection. It didn’t occur to me that Crane wrote Westerns besides Bride and Blue Hotel. These will be of value as I prepare to teach a college course on Westerns. Thoughts on additions: Some of Frank Norris’ stories are Westerns, though it’s not his best work. Pam Houston? Kittredge’s Penguin anthology? McGuane? Guthrie’s Big It? Kelton? Proulx? McMurtry edited at least one collection.

If those other works you mention are collections/anthologies of Western short stories, please do add them; that's what lists like these are for!
