Can you define a "symbol"? Do you mean like a keyboard symbol, or more like when a literary symbol is used in the book and the cover has a picture of this symbol? (Such as The Lord of the Flies pig head, or the Philosopher's Stone on Harry Potter, or To Kill a Mockingbird's mockingbird)

Well, that's a very cool question, Julia!

A keyboard symbol would definitely be too wide, since all books have some letters which are symbols, in the wider meaning.

A literary symbol would also be too wide, since all books, especially fiction ones would have some kind of symbol in them and often it would be somewhere on the cover.

So, a graphic symbol it is. Something representing something else in a conventional way. A portrait, a dog, a foto - more often than not - not a symbol. A pentagram, Fatima's hand, Yggdrasil - yep, often represented symbolically enough.

Anyway, let's just see what we can compile here. It might be fun to see what each of us considers to be a symbol.
