Other than lactose intolerance, I'm fortunate not to have any food allergies.

You are fortunate. Lactose intolerance is actually an deficiency in enzymes I have been told.

I have many food allergies and sensitivities, as well as being celiac, and have since I was a small child. Back then there was very little public knowledge about food allergies. It's really nice to see that nowadays, there are so many books and resources for people who are learning how to adjust.

Same here! Air Force doctors said there is not such thing as food allergy even tho I went to the ER often with severe asthma. They didn't believe in it so therefor it didn't exist even tho they tested me for pollen and mold and gave me deadly allergy shots which contained formaldehyde. I was a guinea pig. Finally a brilliant civilian doctor diagnosed by 12 food allergies. I may have celiac too per Dr. Scot Lewey.
