As for lemon tarts, that's harder. I have a lot of opinions about them (not too sweet please!) but I think this recipe from Mary Berry is the closest to what I like. It has a solid curd to crust ratio, is tart and not too sweet, and allows the lemon flavor to really shine. http://www.maryberry.co.uk/recipes/gr...
