Hi! Really wanted to thank you for a Gentleman in Moscow- am not exaggerating when I say it really has changed our outlook on life and is beloved by both my husband and I. My question is a bit trivial: I'll be attempting the Bouillabaisse this weekend, and the Absinthe chapter is one of my favourites in the novel. I can't seem to find absinthe in any recipes of bouillabaisse- is there a story here?

Bouillabaisse is a little like Bolognese in that it is a regional dish with a central theme, but lots of variations. Many, though not all, bouillabaisse recipes will incorporate a few tablespoons of absinthe or its equivalents such as Pernod or pastis. This is a natural complement to the flavor of the fennel. If you google Bouillabaisse and Pernod you will find a bunch of recipes, but here is one from Mark Bittman at the NY Times:

Are you familiar with two of my favorite literary gentlemen, the characters Francis Crawford of Lymond in the novels of Dorothy Dunnett, and/or Lord Peter Wimsey in those of Dorothy Sayers? I saw hints of them both in Count Rostov. I couldn't put A Gentleman in Moscow down; it was wonderful.
