One of my favorite ways is going to the setting I'm writing about (or a close approximation of it, anyway) and taking as many pictures as my phone can hold, and then jot down notes of everything I hear and smell and feel as long as I'm willing to hold still.
Then I go back home and go through my pictures and my notes until I've got the place mapped out inside my head. Once you've got a clear feeling of the gravel underfoot, it's only natural that you hear it crunching as the characters walk.
