Can there be only one favourite fictional couple? Off the top of my head - Belinda (Bee) and Hawke from Cynthia Sax's Sinful Rewards series. I admired Bee's protectiveness and loyalty to Hawke, the big biker dude who she knew absolutely nothing about and yet believed that he was a man to be trusted. Hawke's devotion to Bee, and his constant coming to her rescue (usually arriving on his motorcycle) made him the swoon-worthy fictional hero.
