Way, WAY too hard of a question to answer (but I'm so glad you asked)! Off the top of my head I'd say Lucy and Daniel from My Name is Memory by Ann Brashares--oh, and Karou and Akiva from Laini Taylor's Daughter of Smoke and Bone.
