I'm living in China, so I've already eaten most of the food mentioned in the book. FYI, black eggs basically taste like pickled eggs and congee is just watery rice porridge. Pumpkin seems to be the most popular flavor.

Noah Sturdevant (noahksturdevant) | 173 comments I don't think porcupine is actually cooked here, or maybe just not in my region. If you are interested in chicken feet or pig pancreas I can help you out though. China has different food depending on the region, and in Xi'an, where I live, it is noodle and dumpling country. I will ask around, just in case.

A great book on Chinese food is Shark's Fin And Sichuan Pepper: A Sweet-Sour Memoir of Eating in China, highly recommended.
