I've read quite a bit about the crusades and I know that they used ships that could carry 1,000 people, also that they had side panels to allow war horses to disembark directly onto land (sources Joshua Prawer; secondary and Joinville/Villhardouin; primary).

Anyone know what the technical term for such ships was? I'm presuming cog is out... were they carracks?

Galleys were used in the Mediterranean until the invention of steam power.

the larger form of a galley is a galleass but I think they were developed much later
