This book was so interesting. As someone who has taught herself to cook, the idea that one could be recipe-free by knowing the basic ratios of key ingredients, and then tweaking it to what you want is fascinating. It actually made me want to try some baking (not my forte). But this isn't just about baking, but also stocks, sauces, custards, etc. Great book if you cook a lot!
