For comprehensiveness, I'd suggest The Science Fiction Hall of Fame, Volume One, 1929-1964.
For individual awesomeness, any of these:
City by Clifford D. Simak
I, Robot by Isaac Asimov
The Martian Chronicles by Ray Bradbury
How Long 'til Black Future Month? by N.K. Jemisin
There are so many other great options.
Honorable mentions:
The Best of Cordwainer Smith -- "Cordwainer Smith" wrote in a uniquely surreal style for Golden Age science fiction, and along the way created one of the first "future histories" of mankind. IRL, Paul Linebarger was an influential East Asian political analyst, and literally wrote the book on psychological warfare.
Arcanum Unbounded: The Cosmere Collection by Brandon Sanderson -- short stories in almost all of Sanderson's worlds!
The Ladies of Grace Adieu and Other Stories by Susanna Clarke -- follow-on stories to Jonathan Strange & Mr Norrell. (I read "John Uskglass and the Cumbrian Charcoal Burner" to my son, and it kept him in stitches!)
Dead Man's Hand: An Anthology of the Weird West -- This one just looks like fun!
Looking forward to hearing other people's favorites!
Best,
Robert

There are three directions we can go:
1) Hugo winners: Pros: quality control, Cons: they are not published in one place.
2) Same theme collection: Pros: usually in one book, Cons: the quality can be varied
3) Same author, suggestion?
