Off the top of my head: Roots by Alex Haley, Mindsight by Dan Siegel, Proof of Heaven, When the Body Says No: The Cost of Hidden Stress, Loving What Is by Byron Katie.

American Wife, Middlesex, Midnight in the Garden of Good and Evil, American Pastoral, everything Jhumpa Lahiri writes, The Hummingbird's Daughter.
Ayn Rand - "Atlas Shrugged" and "The Fountainhead" totally blew my mind as a mid-20-something. I don't necessarily resonate with her political and theoretical beliefs, but she weaves stories that are compelling and eye-opening. "Ishmael" was also another that changed my world during the same time in life.
"Alas, Babylon" and "Fahrenheit 451" affected me so when I read them in high school. I've reread them and still harken back to them in my thinking today. The plasma TVs on the wall and in ear shell speaker things from Fahrenheit 451 are part of our everyday lives now!
