The cover may have been a Red European style dragon was looking at/near the reader, in a ‘hovering’ position or sitting on top of a rock. Of course this could be edition-specific (if it had any other editions, I can’t say) , possibly one of those where when you turn your head, the image shifts/moves.
One section talks about a species of dragon which lives on top of mountains (I think it talked about parent dragons taking care of its young).
One section talks about a certain phoenix-like dragon that appears every 50 years. I remember this page was drawn in a traditional Chinese style (though lacking strong colour)
I think there was another dragon that it said it ate at least one sheep/goat every day until someone fed a human girl to it (or some variation of that), This being the only part i remember somewhat clearly as a 'story',
I recall it having a section about dragons’ eyes, and I think it had a full page of an eye staring at you.
It also likely had a whole chapter/section dedicated to dragon eggs.
The art style was more elegant rather than cartoonish (best comparison I can think of is Magic The Gathering cards style art).
Most of the dragons were depicted in the European sense, so four legs and 2 wings, possibly wyverns and likely few, if any, wingless dragons like those of east Asia.
