I can't think of anything right now.. I'll look through my shelves and see if I can find anything that applies.
I don't think that I've read any books where that apply, but the ones you mentioned sound good, and I'll probably check them out! Sorry that I couldn't be of help!
One of the characters in the Phoenix Chronicles series can change into many animal forms. He's a skinwalker, but he has many "skins," so to speak. The first book is Any Given Doomsday.Sharon Shinn writes The Twelve Houses, a great action/romance fantasy series revolving around a group of people who each have their own magical talents. The first book is Mystic and Rider, and you meet a shifting secondary character in this book who gets her own book later.
The obvious shifter is Sam from Sookie Stackhouse books. But then, he's not the main character and never really fully explored. Then there's The Rachel Morgan series aka The Hollows. Not a perfect fit, Kim Harrison has her characters transform into animals now and again, but it's more due to ritual magic, not due to their inherent nature (werewolves exluded). Still, it's shifting alright.
Another series would be Sapkowski's Witcher books. The title protagonist does not change all that much, but he fights plethora of shifters and other weird creatures.
I think that's all I've got for now.
In Carpathians series (first book: Dark Prince) by Christine Feehan vamps can also shapeshift; they have favorite form to shift to, but they're not restricted to it. I recall some wolfs, owls, felines and a dragon or two...Also, Faith Hunter's Skinwalker: heroine can change into multiple forms.
Thanks all, Handeland's Phoenix Chronicles and Hunter's Skinwalker sound like a couple I'm going to add to my TBR shelf.
I really liked Faith Hunter's Skinwalker, it's the 1st of a series so there's a little bit of slogging through world building, but by the end I was very interested in reading more about her world. It was a nice dark urban fantasy, no romance (yet).The main character has her old standby form that she regularly shifts to(a big cat, I think it was a panther), but she can change into many different things.

Some examples of what I am looking for that I have read already are:
The Animorphs series by Katherine Alice Applegate where a group of kids are given the ability by aliens to turn from human into any animal they touch and back again.
The Switchers trilogy by Kate Thompson where certain kids have the ability to turn from human into multiple animals, real and fantasy, and back to human until they reach a certain age and have to choose what form they want to spend the rest of their life in, human or a certain animal.
Lee Driver's Chase Dagger mystery series that starts with The Good Die Twice where the detective's assistant has the ability to change into both a wolf and a hawk and back.
In Yasmine Galenorn's Otherworld/Sisters of the Moon series, one of the characters has the ability to turn into both a tabby cat and a black panther.
