Hi Kim! Thanks for posting your invite on Comfort Reads. I am looking forward to finding some new recipes and maybe sharing a few!
Welcome to our happy band of merry bakers! I hope you will enjoy the fruits (cookies?) of our labors and if you have any questions, please feel free to ask.
Yes, they are. If you enlarge the image, the names of the cookies are listed. My boyfriend took the picture for me.

Hello, everyone! My name is Sonja, and I love to read, bake, teach, and spend time with my boys. I am a Special Education teacher who is job-sharing a position in my home town. I prefer to cook and bake recipes that are easy to make and have photos to go by. I would love to hear what all of you like to bake and to learn some new recipes. Cookies are my weakness!!!!
Welcome! I hope you will share your favorite recipes with us soon..
By the way, you and Paul have a bit in common! He's a Special Ed teacher too! You two will have a lot to talk about!

Hi, my name's Kori and I am a cookie monster. Sugar cookies are my weakness, followed closely by pumpkin.I'm a theater-dance major, and I love Japanese cooking (Makizushi - yum!) and French cooking. I've also recently learned about cake pops, so I've been busy in my kitchen.
Welcome aboard! Glad to have you. Hopefully you will have some sugar and pumpkin recipes to share.
I got a cake pop maker for my birthday last year and it alot of fun i make tham all of the time for my homeschool group, they are alot of fun to make and decorate!
My neighbor turned me onto cake balls. They look like truffles and they are SO easy to make.... unfortunately.
Hi. My name is Turtle. I'm just a kid but I LOVE to bake! I hope it's not a problem I'm a child because I'd hate to have to leave this group! I love to bake cookie but my main topic is cupcakes!

Wow, me too!!!!!! I love my parents for homeschooling me, I wouldn't make it a day in public school. For one, I don't think I could get up early enough! I'm 12, I'll be 13 in October.
Did you two know that there are groups on here just for home schooled kids? I just thought that if you haven't found them yet, you might like to know. :)
Oh thanks i will have to check it out! I havnt really done much group looking so mabye i need to start! I bet theres some cool ones out there...
Welcome! We are all about baking, but since I specialize in cookies, well....there you go. I hope you will be happy here and if you have any questions, just ask. :)
Thanks, I will. I was wondering if anyone ever uses fresh ginger in cookies/baking instead of powdered ginger?
Lori K wrote: "Thanks, I will. I was wondering if anyone ever uses fresh ginger in cookies/baking instead of powdered ginger?"I'd like to try it. I have a recipe that uses chopped candied ginger in cookies, but it tends to soften the cookie after a while, and I prefer them crispier.
let me know if you try it!
Your recipe sounds good. I've been wanting to try candied ginger in something. Is it posted here somewhere?
Lori K wrote: "Your recipe sounds good. I've been wanting to try candied ginger in something. Is it posted here somewhere?"I don't seem to find it. I'll keep looking. However this is my favorite scone recipe:

Alton Brown did a whole show on ginger and made ginger snaps with both fresh and candied ginger. You can find it at foodnetwork.com
Also, Rachel Ray makes a cheese ball that has candied ginger in it that is quite good. "My mom's cheeseball" can be found at her site, rachelray.com You want the t.v. show link and search the archives, or just type in the key ingredient.

Thanks! I've never sent that episode. Thought I'd sent them all. Will watch it today. This is great.
Hey everyone i just want to say how much i appriciate this group and all of the tips and help and how i can sort of lean on you guys for tips and help in my baking and cooking... I just am VERY thankful! (:
You are very welcome. I am glad that this group is what I set out for it to be. A place of sharing, tips, and support for those who need it.
Hi there, Everyone. This is really cool. You'll be my first online group, I think, anywhere. Can't think of a better way to start than with cookie lovers, though. Okay, so my name is David, and I don't like cake. There, I said it. Cookies, though, ah yes, cookies. And chocolate! I'm actually kind of interested in recipes that are geared toward making one at a time. It keeps me from eating the entire bag, and also, blows the store competition out of the water. Been collecting and refining these, so my posted recipes will lean in that direction. A couple of mugs, a spoon, and about fifteen minutes with baking time included and I'm eating a good sized cookie just the way I like it.
Looking forward to being on here. (Full disclosure: I'm putting these recipes together into book form, but they're all available for free - or will be to you - so I'm not selling anything, at least not to you.)

I know most mug cakes that are typically one serving, call for one egg. Even when you halve recipe, you normally use the whole egg, but I guess you could be using a liquid egg.....

Um, yes, I just beat one egg (in a mug), then use what's needed and refrigerate the rest (use leftovers for scrambled eggs, or my one cookie for the next day!). Egg substitute would work, but not as well, and not quite as rich as I like them, but that's up to everyone.

Freezing egg yolks - add a small amount of either salt or sugar, since yolks would get hard otherwise. I suppose if you wanted to freeze beaten eggs, you might still have to put a little salt or sugar in them
If you look under tips, there is a link to a site that tells you all you ever wanted to know about eggs and the freezing of them.
