A Wizard of Earthsea - great nomination Emma :) I haven't read it myself but it's one of those classics I keep hearing about, so I'll second that.I'd like to nominate To Say Nothing of the Dog by Connie Willis. It mixes a few genres, but fantasy is one of them, and it looks really cool.

Unfortunately The Handmaid's Tale is science fiction (or 'speculative' fiction), definitely not fantasy. It's really good though.
