I am looking to eat a more plant based diet and was wondering if anyone had suggestions for a good vegetarian cookbook?

Bittman's book (that Bunny recommended above) is fantastic. Some other favorites of mine are (sorry! not sure how to insert links):Super Natural Cooking: Five Ways To Incorporate Whole and Natural Ingredients into Your Cooking by Heidi Swanson
Cook 1.0: A Fresh Approach to the Vegetarian Kitchen by Heidi Swanson
(Heidi Swanson also has a great cooking blog at: http://www.101cookbooks.com)
The New Moosewood Cookbook by Mollie Katzen
The New Enchanted Broccoli Forest by Mollie Katzen
Vegetarian Cooking for Everyone by Deborah Madison
Oh! And...Veganomicon: The Ultimate Vegan Cookbook by Isa Chandra Moskowitz & Terry Hope Romero
That one is vegan, but as a vegetarian I substitute some cheese and dairy in some of these recipes, and everything I've made from it has been fantastic. Try the Caesar Salad--better than the original!
Moderator comment: I'm moving this up out of cookbook reviews to general, because it seems like more general advice. Feel free to post individual reviews of cookbooks in the review section below.
