Thanks for sharing your recipe Sandi. I've always wanted a crock pot but have never invested in one. I think it would be a nice mother's day gift so maybe I'll ask for one. They seem very handy for busy people.
One time I hit the farmers market & went a little crazy on the veggies. So I had to do something with all these before they went bad:SANDI'S VEGETABLE SOUP:
1cup each of: celery,carrots,green & yellow beans,parsnip,snow peas,green & red peppers,turnip,squash,zucchini,peas,1 small yam,1 small onion,aspargus tips,red potatoes(skin on)
1 bayleaf,pepper,pinch of thyme,basil,or oregano
Low sodium/gluten free veg-cube,dissolve in cup of hot water.
Add all vegetables into crock pot (do it in layers) add spring water & veg broth to cover veggies, cover & cook on low 6 hours(if you like your veggies still crisp)longer if not.
*note* I than put in 1cup tupperware & freeze for a quick meal later and add tofu or cooked rice or beans. Sprinkle with sprouts on top!

These beans were a big hit at a Festivus potluck, even the greens haters gobbled them up.Solistice Bean Stew
soy-free, gluten-free
3 cups cooked pinto beans (or 2 – 14.5 ounce cans)
2 to 3 cups pumpkin, peeled and cut into cubes
1 cup water
1 tablespoon chick’n bouillon
1 teaspoon jerk seasoning
1 tablespoon port wine
crushed hot pepper or cayenne, to taste
2 cups kale (or other greens), stems removed and chopped small
salt and pepper, to taste
The night before: Peel pumpkin then cut in half and remove seeds. You can clean up the seeds and toast for snacking or garnish. Chop the pumpkin into
In the morning: Add the pre-cooked pinto beans, pumpkin, water, jerk seasoning, wine and hot pepper to an oiled crock. Cook on low heat for 6 to 8 hours.
40 minutes before serving: If there are any chunks of pumpkin that haven’t ‘melted’ into the stew mash them with a fork. Add the kale and cook until tender (about 40 minutes). Add salt and pepper to taste and add more chili or jerk seasoning if needed.
And being currently obsessed with both slow cooker and oatmeal I have to share one of my favorites:
Slow Cooker Vanilla Fig Oatmeal with Baklava Filling Topping
2 to 3 servings
**This recipe uses a smaller slow cooker that’s 1 1/2 to 2 quarts
1/2 cup steel-cut oats
2 cups unsweetened So Delicious Coconut Milk (only 50 calories a cup!)
1/2 cup chopped dried figs
1/4 teaspoon cardamom
1/4 teaspoon food grade orange flower water (optional)
1/2 vanilla bean scraped or 1/2 teaspoon vanilla paste or 1 teaspoon vanilla
‘baklava filling’ topping
1 tablespoon chopped pistachios
1 tablespoon chopped walnuts
1 tablespoon chopped almonds
1 tablespoon brown rice syrup
1 tablespoon agave nectar
pinch of cinnamon
The night before: Spray your crock with some oil to help with clean up later. Add everything except baklava filling topping ingredients to the slow cooker. Now mix together the ‘baklava filling’ in a small bowl and store in the fridge until the morning. Cook on low over night (7 to 9 hours).
In the morning: Stir your oatmeal well. It may seem watery at the top but if stirred it should become a more uniform consistency. Top each serving with a few tablespoons of the baklava filling, making it as sweet as you like it.

HEARTY SPLIT PEA SOUP:2 cups split green peas
1 cup brown rice (uncooked)
8oz spinach
2 stalks celery chopped
2 carrots sliced
1 turnip diced
1 med potato diced
1 small oinion
4 cups of veg broth & 2 cups of water
chopped fresh parsley & pinch of pepper 1 bayleaf
Place in crock pot in order low 6-8 high 4-6
when done take half the soup & put in blender, puree a few seconds then put back in pot for a thicker broth result.
So good on a cold Canadian day!

VEGETABLE LENTIL STEW:1 cup dry lentils
3 cups of fresh chopped asst veggies(can use frozen if in a hurry)
1 cup water
1 15 oz can n/s diced tomotoes with juice
2 carrots sliced
6-9 sundried tomotoes chopped
3/4 cup shredded red cabbage
1/2 cup shredded green cabbage
1/4 chunk of horseradish
1/2 can 7oz great northern beans or lima
1 tsp oregano,basil ,It.seasoning,pepper.
Combine dry lentils & water in bottom of slow cooker
Add veggies,tomotoes with juice & sundried tomotoes.
Add cabbages & beans & spices
low 8-10 hrs high 5-6 hrs
Serve & sprinkle with spouted lentils

I do too. I'm not sure I need a crock pot though since I'm cooking for myself only and usually don't like making more than 2 servings. But all these recipes I could make easily in a covered pot on the stove; I'd just have to precook the beans and grains, which is fine with me. All the recipes look delicious! It cooks 2 servings of soups, oatmeal, etc and can be used for dips and even cooking a smaller amount of dried beans.

So easy no fuss and you can put it right in the fridge as is for the next meal!

I have nowhere near an existing power outlet to plug one in.

I would leave it plugged in only when the appliance was in use, but for something like a blender I'd be right in the room. For a slow cooker, I'd have to be more certain and be more careful that it was a safe way to go.
BROCCOLI-CAULIFLOWER SOUP:1-2lbs-cut up broccoli
2-cups cauliflower cut up
1-med carrot sliced
1/2 or 1 onion diced
1 or 2 cloves of garlic
1 can of cream of celery soup
1 cup of veg stock
Place all in crock pot low- 4-6 hours, high 2-3 hours
A nice creamy flavorable "quickie" on a cold day!

No its not real egg..it is a egg white substitute..Hmm by kingsmill? As for the soups..III get the name next time I go ( its an hour away) they also have a mushroom,squash, and other yummy ones :)

Would it be possible to put a small table close to an outlet rather than using an extension cord? Feels safer in my head, anyway. Oh, also, I usually put my crockpot on a metal surface, a pizza sheet or something. Just in case. I know they don't get VERY hot, but I have a wooden countertop.
Selah, I have a horrible kitchen/apartment, and for now, until I figure it out, I'll do without. A lot of the crock pot recipes I can make almost identical dishes in more traditional ways.

This oatmeal looks so delicious I think I am going to try and make it this weekend for breakfast!
Here's a coffee too!Slow Cooker Gingerbread Latte
*This recipe requires a small 1 – 1.5 quart slow cooker.* (You can double or triple the recipe and use a larger one if you like.)
Makes 2 servings (unless you drink a venti and then it’s just one serving)
soy-free, gluten-free
1/4 cup (63ml) cold brewed coffee concentrate or 1 cup (250ml) regular brewed coffee
1/4 cup (63ml) So Delicious Coconut creamer original flavor
2 cup (500ml) Unsweetened So Delicious Coconut Milk
(can use vanilla or plain just adjust sweetener)
1/2 teaspoon ground ginger
1/8 teaspoon cinnamon
pinch ground clove
pinch ground allspice
pinch nutmeg
1 teaspoon molasses (optional)
Sweetener to taste: brown sugar, stevia, agave nectar, or maple syrup, etc.
(I used 1/2 packet Nu-Stevia)
Put everything but sweetener in the slow cooker. Add molasses. Whisk until ingredients are well combined. Taste and add your choice of sweetener until it’s the way you like your latte.
Cook for 3 hours on low or 1 1⁄2 to 2 hours on high. You are just heating it, so you could also do this on the stove top if you are in a hurry.
I like to put drinks on in a slow cooker before a dinner party and then it’s piping hot and ready to serve with dessert.

Ohh.. I love crockpot recipes!! I have to dig mine out again and see what I can make and post the recipe. The only cook book I have is Robin Robertson's "Fresh from the vegetarian Slowcooker". I haven't used it since switching over to be a vegan so I'll have to see how many are veganize-able. I think, I remember reading in her blog that she said most of them are. :)Thank you, Kathy, for posting all those yummy recipes! :)

I like Vegan Planet: 400 Irresistible Recipes with Fantastic Flavors from Home and Around the World quite a bit. I need to go back to it and try more recipes. It's so easy to get distracted with new cookbooks coming out so often.

CROCK POT MINESTRONE:
1 med onion,chopped
2 med carrots,thinly sliced
2 stalks of celery,cut into 1/2 inch pieces
1 red bell pepper,seeded,cut into 1/2 inch pieces
1 med zucchini,sliced into 1/2 inch rounds
2 cloves garlic,minced
2 141/2 oz. can veg broth
1 28 oz.can crushed tomatoes
2 15 1/2 oz. cans kidney beans drained
2 tsp. dried marjoram
1/4 tsp.gr black pepper
1 1/2 cups cooked brown rice
Add all ingredients except rice to crock pot. Cover & cook on low 8-10 hours or high 4-5. Add cooked rice & stir to combine. 8 servings
