I haven't tried them but (I think) there is a recipe for them in Vegan Yum Yum: Decadent (But Doable) Animal-Free Recipes for Entertaining and Everyday.
I just finished reading Candle 79 Cookbook: Modern Vegan Classics from New York's Premier Sustainable Restaurant and there is a doughnut recipe in there, sans holes, but I'll bet they taste good, and no holes means more cake!
I've made the Vegan Yum Yum ones before and they were really tasty: http://veganyumyum.com/2007/02/mini-d...I also have a recipe for wholemeal baked yeast-risen ones in my cookbook Triumph of the Lentil, when they're served hot they taste almost exactly like the deep fried ones.
To make jam doughnuts: Roll each bit of dough into a ball, and then flatten to about 1cm (1/2”) thick. Place a teaspoon full of jam in the middle of this, then pinch the edges out, to flatten them even more. Completely cover the jam with the thin dough by working in a circle, folding a little over at a time. Place seam-side down on a greased baking sheet and brush the top with some extra oil.*
*hope that makes sense, it's difficult to put into writing, but it is really easy to get the hang of once you've got the dough there.
