നാട്ടാഹാരങ്ങളില്ലാത്ത ഡല്‍ഹി ജീവിതം അസഹ്യമായിരിക്കുമെന്നു തോന്നി. മനസില്ലാതെയാണ് പഞ്ചാബികളുടെ ഭക്ഷണം രുചിച്ചു തുടങ്ങുന്നത്. പിന്നങ്ങോട്ട് അതില്‍ പലതും പ്രിയപ്പെട്ട ഐറ്റങ്ങളായി. ഹോസ്റ്റലില്‍ ആലുപറാഠയായിരുന്നു മുഖ്യവിഭവങ്ങളിലൊന്ന്. പ്രാതലിന് നാട്ടാഹാരങ്ങളില്ലാത്ത ഡല്‍ഹി ജീവിതം അസഹ്യമായിരിക്കുമെന്നു തോന്നി. മനസില്ലാതെയാണ് പഞ്ചാബികളുടെ ഭക്ഷണം രുചിച്ചു തുടങ്ങുന്നത്. പിന്നങ്ങോട്ട് അതില്‍ പലതും പ്രിയപ്പെട്ട ഐറ്റങ്ങളായി. ഹോസ്റ്റലില്‍ ആലുപറാഠയായിരുന്നു മുഖ്യവിഭവങ്ങളിലൊന്ന്. പ്രാതലിന് പാലും മഞ്ഞ ജിലേബിയും പതിവായിരുന്നു. ജിലേബി പാലില്‍ കുതിര്‍ത്തു കഴിക്കണം. ഉച്ചയ്ക്ക് ഒരുതരം പരിപ്പുകറിയും ചപ്പാത്തിയും പച്ചക്കറിയും. രാത്രിയും ഇതേ ഭക്ഷണം ആവര്‍ത്തിക്കും. പരിപ്പിന്‍റെ പാചകം മാത്രം വ്യത്യസ്തമായിരിക്കും. ആഴ്ചയില്‍ ഒരിക്കല്‍ മാത്രമാണ് മാംസാഹാരം ലഭിക്കുക. മിക്കവാറും കോഴിക്കറി. വളരെ ആരോഗ്യകരമായ ഭക്ഷണരീതികളാണ് പഞ്ചാബികളുടേത്. പലതരത്തിലുള്ള പയര്‍വര്‍ഗങ്ങളും പച്ചക്കറികളും ഇലക്കറികളും അവരുടെ തീന്‍മേശയില്‍ നിത്യേന എന്നോണമുണ്ട്. അന്ന് എന്‍റെ രസമുകുളങ്ങളില്‍ കയറിപ്പറ്റിയ പഞ്ചാബി ഭക്ഷണത്തിന്‍റെ രുചി ഇന്നും ഇറങ്ങിപ്പോയിട്ടില്ല. ഇന്ന് നാടന്‍ ഭക്ഷണത്തോടും പഞ്ചാബി ഭക്ഷണത്തോടും തുല്യ ഇഷ്ടമാണ്. അത്രയേറെയാണ് പഞ്ചാബി മെസ്സിലെ ഒന്നരവര്‍ഷക്കാലത്തെ ആഹാരശീലം എന്നിലുണ്ടാക്കിയ സ്വാധീനം. ...more
