The persimmon tree is symbolically linked with the 'chair of the gods,' according to Dr. Kim Coder in her article "Cultural Aspects of Trees: Traditions and Myths."
Paired with the symbolically heavy-laden "gold" (important in terms of alchemy (and transformation) as well as being symbolically linked to immortality)) we can assume a "gold persimmon" is both a bit reductive (chair of the gods being doubly linked with immortality) but perhaps also doubly powerful. Super immortality! Hyper transformation! Or, more seriously, divine transformation.
Linking the idea between 'gold persimmon' with the theme of gender fluidity and queerness, the latter (divine transformation) seems more apt.
