I love this book. Just learned it his morning that variations on cheesecake have to do with where the recipe originated. Cheesecake using cream cheese as a base usually originate from NYC Jewish neighborhoods, while ricotta based recipes come from Italian neighborhoods. European recipes use lighter cheeses of varying degrees of ripeness. British cheesecakes are usually tarts traditionally made with curds.
