People in America think watery cabbage soup is Irish cuisine? Really? Where did he get this information? The reason why people usually don't think about Ireland when it comes to roast beef, potatoes, and roasted carrots, or sausages and eggs is because those meals are common to many different countries and basically aren't seen as culture specific; not because people are ignorant of Irish cultural foods.

This guy is full of himself. Yes, using corned beef in boiled dinners is not "traditionally" Irish, but in NYC Irish neighborhoods in the mid-1800s, far from farms, ham and beef were difficult to come by and the Irish-Americans substituting a cured meat has nothing to do with disrespecting or down grading traditional foods. Good grief. Where I live in the US the traditional St. Patrick's Day meal is ham and cabbage.

So where did Americans get the idea Irish food is dull? Consider that many, many Irish-Americans trace their heritage back to the poverty-stricken people who fled Ireland dying a horrific famine in the 1840’s.

This book has a recipe for Christmas plum pudding. If I manage to make it without igniting the entire house, I'll consider this book a success.
