Made palets de dames for the first time. Can't stop eating them. Maybe it's the icing or the butter smell in general (reminds me of butter cookies). Saw a video in yt that pipes out the batter via large piping tip instead of chilling it. Might try that later

A few of these are strange combos, but they might be good. A grapefruit mousse sounds tasty though
