“Once the transformation of wheat flour begins, it cannot be reversed. You cannot simply dehydrate the dough, unbond the gluten, and turn it back to flour again. I like to think of this transformation as akin to baptism. Baptism is something mysterious, something we can never fully understand. We are welcomed into the family of God, and in the process, we are transformed.” Meaningful to start alongside Lent.
