well i think i will do the gazpacho of seville, many ingredients are the same as matbucha (which i love!) but uncooked and with cucumbers and breadcrumbs and water
interesting backstory: alice was unable to find a recipe for it in the bookstore she visited and the bookseller explained that was because gazpacho was only eaten in Spain by "peasants and Americans" lol this book has quite a few little gems like this

having a browse through this and there are indeed three gazpacho recipes. shocked that her potato salad recipe has herring and apple in it and she cooks the potatoes whole before cutting them. in the first chapter she calls leeks the 'asparagus of the poor' (ha!) which is a bit harsh to the poor leek who i'm quite fond of. this is quite interesting to browse through
