This is an incredible book with such wonderful information, photos, baking details. For anyone wanting to truly understand how baking experts from all parts of the world create incredible breads- don’t pass up an opportunity to read this book. The down side- the recipes require a HIGH level mixer not found in every home. That said- it is a book for professionals.
