Reading this simultaneously with Marion Nestle's "What to Eat." they are both good books for different reasons. I like what Bittman is doing here. It is very accessible. He provides a week long menu, also. It is not vegetarian (and I am), but it us still useful. Haven't determined the direct benefit to my current position as manager of an ashram kitchen yet, but enjoying tremendously.
