It goes by really fast, and I’m wondering how kaneki is going to supress his craving for humans.

I like how instead of the usual getting bitten or eating the flesh of a zombie, ghoul, demon, etc… Kaneki became a ghoul through an organ transplant. Very different and clever, also showing how him and the girl connect together, more than just interests.
