So much salt coming from America's Test Kitchen: "We didn't feel the need to include 'gluten-free' recipes for roast beef or steamed broccoli. Our mission for this book was to solve more pressing problems faced by the home cook who is no longer eating dishes made with wheat-based ingredients."

Dear America's Test Kitchen,

I did buy a cast iron skillet just so I could make your cornbread, and I'll mix up a batch of your GF all-purpose flour mix and give it a try, but I am not rinsing my uncooked rice, letting it dry, and then dumping it back into water to cook. I refuse.

America's Test Kitchen has done what nobody else could do: They've convinced me to mix up some of their GF flour blend. I'd probably jump off a cliff if America's Test Kitchen told me to, as long as they explained why it was necessary. And they would. At length.
