Recently my daughter Colleen and her partner Robert took a trip from Boston into NYC. They stopped in one of the new food stall buildings and there were 2 ladies making peorgi. They were so taken by the peorgies that Robert decided to learn how to make them. Evidently the end product was fabulous. If I remember correctly he made potatoes peorgi. Thanks for posting this as I am going to surprise him with this book.
