I have been watching the great courses' great world religions series', which has kept my attention away from reading for a while.

Which world religion is most interesting?

Honestly, it depended on the character/charisma of who was presenting, whether it covered content I already knew, and whether the teaching was tangible or superficial.

I think I probably found the Hinduism one most engaging due to the reasons listed above. It is so different from the world I am used to, so that made it interesting.

Before the world religions ones, I also watched one about the historical relationship between Science and Christianity, which was also interesting to me, being both a(n) (applied) Scientist and a Christian.
