There are apparently, amongst chili fans and chili historians, three books that are regarded to be the "Holy Trinity", if you pardon the expression, of chili history.

With Or Without Beans, by Joe E. Cooper
A Bowl of Red, by Frank X. Tolbert
The Great Chili Confrontation, by H. Allen Smith.

This book is complicating things for me as a budding (and selective) nutritional anthropologist. The book makes references to documents and newspaper articles, as well as other books, the earliest of which dates back to the mid 1500s. After completing this book, and hopefully after reading the elusive copy of "With Or Without Beans", I am going to have to do a lot more research!

People may not be attracted to these three books for the purpose of general reading, especially given the way the last two in that list are composed, but in the chili community, they are prized rather highly.

I may have inadvertently received an AUTOGRAPHED copy of this book! I have the 4th edition, published in 1972, and am investigating the legitimacy of the signature in the front. I'll let you all know how it goes!
