Does anyone read paranormal / fantasy romance these days? Is there even a New Adult following for that?

I dont think so. There are a few NA PNRs that I can think of, but mostly the following is for contemp.

I couldnt really say why its not a popular genre, but arent a lot of readers of NA, not NA anyway? I mean, most of my GR friends are grown women. I am a grown woman. :P I still prefer PNRs. But really, it doesnt make a difference to me what age group it is targeted for.

I think if the premise is good and the characters are well developed then people would read it regardless that it is NA? The only NA PNR I can think of would be Jeaniene Frost - her Nighthuntress series is technically NA and so will her new series out next year. Specifically targeting NA can be helpful but also detrimental to marketing your work - some people actively seek out NA and then others (like myself) that think twice about picking one up (I find many of them have become formulaic like a category romance). A NA PNR would be a refreshing change from all the CR
Night Huntress seems very adult to me. NA refers to the target audience, not the age of the protags. When I think NA PNR I was thinking of Abbi Glines Existence series and most of Trisha Wolfe's books.

I think the definition of NA varies from publisher to publisher. I agree it SHOULD refer to target audience, but it doesn't in all cases (many times it refers simply to the ages of the protagonists).
LOL. Maybe just write what you want to write instead of trying to meet the current market? Because I think a good story wins every time. Unless of course you are secretly dying to write a story of say Lesbian Basket Weavers of New Zealand....then that might have a very limited market. Or maybe it could be really interesting?

It's done in such poor taste IMO.
Actually there is but there aren't that many that are New Adult. One really amazing new Adult paranormal romance is the Otherworld Summons series. The first book, Gargoyle Addiction was seriously so amazing! I definitely recommend it. NA PNR has such potential; I really hope the genre expands and develops. I'm currently reading the sequel, Dragon Craving. It's so good.
And you should DEF write one. I, for one, would instantly read it lol.
