Contrary to popular belief, sushi isn’t about freshness, , it is about timing, . Not just your rice the proper temperature, but also having your fish the perfect age. Serve fish too soon out of the water and its muscles will be too tight and flavour underdeveloped. Wait to long and the protein turns to mush.

The most enjoyable kai read so far this year. Delicious. 🤤
